Quinoa Salad Recipes - Delicious and Healthy!

Nutrient rich and alkalizing quinoa is becoming increasingly popular, especially as more and more people move towards a gluten-free, gluten-reduced, or alkaline foods diet. One of the most versatile ways of preparing this seed is using it as a base for a salad. Here are two of our favorite recipes packed with quinoa nutrition!

Southwest Quinoa Salad


  • 1 cup quinoa
  • 2 cups vegetable or chicken stock
  • 1/2 teaspoon kosher or sea salt
  • ¼ red onion, diced
  • 1 can black beans (15 oz)
  • 1 cup frozen corn, defrosted
  • 3 roma tomatoes, diced into chunks
  • 2 cups of queso fresco, or your hard cheese of choice cut into chunks
  • 1/4 cup chopped cilantro
  • ¼ cup of fresh salsa fresca ( prepackaged from store)


1 Cook quinoa according to package direction, using 1 cup of the seed to 2 cups of stock (or what’s recommended by the package). Cook the onions with the stock to take some of the bite away from the onions. Takes approximately 20 minutes. Let stand for five minutes after cooking, and then fluff it with a fork. Transfer to a large mixing bowl and let them cool.

2 Mix all of the other ingredients with the quinoa. Serve!

Greek-Inspired Quinoa Salad


  • 1 cup quinoa
  • 2 cups vegetable or chicken stock
  • ½ tsp kosher or sea salt
  • 1 small cucumber, seeded and sliced
  • 12 pitted kalamata olives, halved
  • 1 medium ripe avocado, diced
  • 1 1/2 oz feta cheese chopped into small pieces
  • 1 tbs fresh mint leaves chopped finely
  • 2 tbs fresh flat-leaf parsley chopped finely

For the dressing:

Choose your greek inspired salad dressing of choice at the local supermarket. Greek vinaigrette dressing will go particularly well with this recipe.


1. Rinse the quinoa and add it to a saucepan with the stock. Bring to a boil, cover and simmer until the liquid is absorbed, about 15-20 minutes. Remove from the heat and let it sit for five minutes before fluffing with a fork. Transfer to a salad bowl and let cool.

2. Add the remaining ingredients to the bowl with the quinoa. Add the dressing to taste. Start of light and increase to taste and toss ingredients together.
